Carvoeiro's restaurants — stacked up the slopes with the cove below — treat the cataplana as the house ceremony: the hinged copper clamshell sealing clams, prawns, mussels and often monkfish over tomato, onion, peppers, garlic, coriander and white wine, steamed shut and opened in a cloud at the table.
It is always a dish for two, built for the long evening after a cliff-walk day, and the versions here lean coastal — the morning's fish from Ferragudo's lota a few minutes away. Bread for the broth is not a suggestion.
