Leitão da Bairrada is one of Portugal's great dishes: suckling pig rubbed inside with a paste of garlic, pepper and lard, spit-roasted whole in wood-fired ovens until the meat is milk-tender and the skin sets into brittle, glass-crisp sheets.

Its capital is Mealhada, twenty minutes north of Coimbra, where roadside restaurants roast hundreds daily; the canonical service is simple — slices of orange, fried potato or salad, and a cold glass of Bairrada espumante, whose acidity cuts the richness perfectly.

Coimbra's own restaurants serve leitão too, but the pilgrimage to Mealhada is part of the dish; few detours in Portugal repay the kilometres so well.
