Before the roast or after it, Alcoutim offers its own simple board: queijo cabreiro, the tangy, semi-cured goat's cheese made from the milk of the herds that graze the Serra do Caldeirão, with good bread, olives and perhaps a spoon of regional honey.

Alongside it comes the other great local product — medronho, the clear, fiery spirit distilled from arbutus berries in the same hills. Cheese to start, medronho to finish, both made within sight of the village: it is the most honest taste of Alcoutim, and the easiest thing to carry home.
