Arroz de lingueirão brings together the two things Comporta actually produces: razor clams dug from the sands of the Sado estuary and carolino rice grown in the paddies behind the village.

The clams are opened in a little water, and that liquor — intensely of the sea — becomes the stock in which the rice cooks, over a base of onion, garlic, tomato and bay, loosened with white wine and finished with fresh coriander. Served soupy and steaming, it is the dish most restaurants in Comporta and Carrasqueira build their reputation on.
